Ingredients: 8 medium red potatoes peeled if desired; 1 1/2 celery ribs, chopped fine; 1/2 green bell pepper, chopped fine; I hard boiled egg grated; 1/3 cup chopped fresh parsley; 4 slices slab bacon, chopped; 1/2 medium onion, chopped; 2 tsp all purpose flour; 1/2 tsp salt; 1/4 tsp black pepper; 3/4 cup beer; 6 tbls cider vinegar; 1 tbls plus 1 tsp sugar; 1 tbls brown mustard

8 medium red potatoes peeled if desired
1 1/2 celery ribs, chopped fine
1/2 green bell pepper, chopped fine
I hard boiled egg grated
1/3 cup chopped fresh parsley
4 slices slab bacon, chopped
1/2 medium onion, chopped
2 tsp all purpose flour
1/2 tsp salt
1/4 tsp black pepper
3/4 cup beer
6 tbls cider vinegar
1 tbls plus 1 tsp sugar
1 tbls brown mustard

1. in boiling water, cook potatoes over high heat until tender, 15-20 mins. Drain, rinse in cold water and set aside to cool.

2. Place celery, pepper egg and parsley in a large bowl. Slice potatoes thick and add them.

3. Fry bacon until browned and crisp. Remove bacon and reserve it. Add onion to the warm bacon drippings and cook until softened. Sprinkle in flour, salt and pepper and stir to combine. Pour in 1/2 cup beer, vinegar, sugar and mustard and bring to a boil. Reduce heat and simmer for 2-3 minutes.

4. Pour sauce over potato mixture and toss to combine. If it seems dry, add the rest of the beer.
