Ingredients: 2 chicken breasts, cubed, or 1/2 lb.; 1 egg white; 4 tsp. cornstarch; 2 Tbsp. soy sauce; 1/2 c. scallions, sliced; 1 c. peanut oil; 1/4 tsp. crushed red pepper; 1 tsp. sugar; 2 Tbsp. dry sherry or water; 1/2 c. peanuts

2 chicken breasts, cubed, or 1/2 lb.
1 egg white
4 tsp. cornstarch
2 Tbsp. soy sauce
1/2 c. scallions, sliced
1 c. peanut oil
1/4 tsp. crushed red pepper
1 tsp. sugar
2 Tbsp. dry sherry or water
1/2 c. peanuts

Combine chicken, egg, 3 teaspoons cornstarch and 1 tablespoon soy sauce.

Mix well.

Refrigerate 1 hour.

In skillet, heat peanut oil and stir-fry chicken.

Drain.

Pour off all but 1 tablespoon of oil from skillet.

Add pepper and chicken.

Stir-fry 1 minute. Blend remaining cornstarch, soy sauce, sugar and sherry or water. Add to chicken mixture while stirring over high heat until coated. Stir in scallions and peanuts.

Serve with rice and a dish of chilled fruit like mandarin oranges on the side.
