Take 4 cups of water, the uncooked rice, almond flour and the cinnamon stick and put it in a blender. Blend for about 15-20 seconds so that the rice is coarsely ground.

Pour the mixture in a large bowl or stockpot and add the other 4 cups of water and cinnamon. Let the mixture sit at room temperature for 4-5 hours.

After 4-5 hours, take batches of the mixture and blend for another 30 seconds so that the rice is finely ground. Pour the blended mixture through a fine mesh sieve or cheesecloth to separate as much debris as possible.

Once everything has been separated through the cloth or sieve, take the remaining liquid and put in a pitcher. Add the sugar and serve over ice and with an extra sprinkling of cinnamon.
