2 fryers, cut up
1/4 c. honey
1 c. orange juice
1 c. hot water
1 c. matzo meal
1 Tbsp. salt
1/8 tsp. pepper
2 eggs
2 Tbsp. water
1/2 c. peanut oil

Heat oil in skillet.

Beat eggs with tablespoon of water. Mix matzo meal, salt and pepper.

Dip chicken in egg, then in matzo meal.

Brown in hot oil.

Remove to Dutch oven or covered roaster.

Mix hot water, orange juice and honey.

Pour over chicken.

Cover.

Simmer on top of stove or in 350u00b0 oven for 45 minutes or until tender.
