Grease a large zip lock bag and place the dough in the bag and then into the refrigerator. Let the dough set overnight and up to 5 days, checking the dough daily and de-gassing as needed.

Preheat your over to 350 degrees. Roll out 1/2 of the dough into a rectangle about 18 x 12 inches. Slather the dough with butter, sprinkle brown sugar and cinnamon over the butter. Roll up the dough so you have an 18 inch log. Cut the dough into 3/4 inch slices and place in a greased Pyrex baking dish. Don't squish the rolls to much. They will spread as they rise. Bake in the oven for 9 to 12 minutes, until the tops are just browned. Remove from pan while buns are still warm.
