2 oranges, peeled and sliced thin
1 c. honey
1/2 c. lemon juice
1 tbsp. brandy (opt.)

1/2 teaspoon salt
Salt and pepper
1 stick butter
1/4 c. brown sugar
2 teaspoon orange peel, grated
1 tbsp. prepared mustard
1/2 teaspoon pepper

Wipe ducks inside and out; sprinkle cavity with salt and pepper.

Divide sliced oranges and fill each cavity.

Place breast down in roaster.

Coat liberally with butter.

Cover and roast at 325 degrees for 1 hour.

Turn ducks, breast side up, and baste with honey mix.
