Honey-Mustard Glazed Lamb

   Place lamb, fat side up, on a rack in a shallow roasting pan. Insert meat thermometer, making sure it does not touch fat or bone.

   Bake at 325u00b0 for one hour.

   Combine mustard, honey, salt and pepper; mix well and spoon over lamb.

   Bake an additional 45 minutes to one hour or until meat thermometer registers 160u00b0.

   Let stand 10 minutes before carving.
