Ingredients: 18 chicken drumsticks; 2 tablespoons runny honey; 1 1/2 teaspoons chilli powder; 5 tablespoons olive oil; 1 1/16 cups long grain rice; 9 tomatoes 6 deseeded and diced, 3 cored and cut into 8 chunks; 1 green pepper deseeded and cut into rings; 1 red chilli deseeded and finely chopped; 2 onions peeled and finely diced; 1 lime grated zest and juice; 2 cloves garlic peeled and crushed; 1 pinch caster sugar; 1 5/16 cups yogurt lactose-free; 1 3/4 cups pineapple chunks drained, juice reserved; 15/16 cup coriander leaves fresh, cut into strips; 3/4 cup frozen peas thawed

18 chicken drumsticks
2 tablespoons runny honey
1 1/2 teaspoons chilli powder
5 tablespoons olive oil

Preheat the oven to 400u00b0F. Grease a roasting pan. Season the drumsticks with salt and arrange in the roasting pan. Roast for 25 mins, or until the juices run clear. Mix the honey, 1/2 tsp cayenne and 1 tbsp oil. Brush over the drumsticks then return to the oven and cook for another 5 mins.

Meanwhile, cook the rice in boiling salted water according to the package instructions. Drain, rinse under cold water and allow to cool.

For the salsa, mix the diced tomatoes, pepper, chili, onions, lime zest, garlic and 4 tbsp oil. Season, add a pinch of sugar and a few drops of lime juice.

In a serving bowl, mix the rice, tomato chunks, pineapple and peas. Mix the yogurt, 2 tbsp pineapple juice and 1 tsp cayenne. Season and add a few drops of lime juice. Add the coriander then toss with the rice mixture and season. Remove the drumsticks from the oven and serve with the rice salad and salsa.
