1. Spray your lollipop molds or sheet pans, which ever you are using, with nonstick spray. Make sure you use a non-flavored spray. You don't have to use lollipop molds to make these. You could use a plain sheet pan and just pour the lollipops in rounds, or whatever funky shape you want. Just make sure you spray the pan so they don't stick, or even better, line it with parchment paper and then spray the paper!

2. If you are using molds that hold the lollipops sticks in place, add the sticks to the mold. If you are using a sheet pan to free form the lollipops, you will add the sticks later.

3. In a small sauce pan, combine the sugar, water and light corn syrup. You don't need to stir it, just heat it over medium high and let it come to a boil. Make sure that you have your candy thermometer in place.

4. Let the mixture heat to 250-260 degrees F, then add your food coloring. Swirl the pan to incorporate the color - don't stir it.

5. Continue to heat until the the temperature gets to 300 degrees F. Remove it from heat and add the flavoring oil (don't use extracts like you use for baking, make sure it's hard candy flavoring oil).

6. Working quickly, stir in the oil and then pour the mixture into your molds or onto the sheet pan. Be VERY careful, the syrup is extremely hot (obviously, it's 300+ degrees).

7. Once you've poured the mixture into all of the molds, place your pan in the sink with running hot water (This is for easy clean up!).

8. Quickly get back to the lollipops and using a twisting motion, add the sticks to the middle of the lollipops on your sheet pan (unless you are using the molds that hold the sticks in place). You will have to keep twisting and adjusting the sticks, to keep them in the middle for the first few minutes.

9. Let the lollipops cool completely, this takes about 10 minutes. Then carefully 'pop' them out of the mold or lift them off the sheet pan.

10. Enjoy now or wrap in plastic bags sealed with twist ties.
