Preheat oven to 375 degrees.

Skin and slice the apples into 1/2 inch thick slices.

In a large bowl mix together the filling: apples, sugar, brown sugar, flour, corn starch, cinnamon, and nutmeg (making sure to coat the apples).

Set aside.

In medium bowl, mix flour and salt.

Using a pastry blender cut in the shortening until pieces are pea sized.

Add 6 tablespoons of the water and mix.

Continue adding one tablespoon at a time until dough is moist and a ball forms.

Knead the dough in the bottom of the bowl to pick up the rest of the dry ingredients in the bottom of the bowl.

Divide the dough in two, leaving one part slightly larger.

On a lightly floured surface roll out the larger ball so that it will cover your pie dish.

Place the dough in the pie dish.

Mix the nuts in with the apple mixture and pour filling in the pie dish with all of the juices.

Roll out the smaller ball and cut into strips.

With the strips create a lattice top.

Cut the extra dough off so that it does not go over the edge of the pie dish.

Using a for crimp the bottom and the lattice strips together.

Cover the edge of the pie and place in the oven for 40 minutes.

Remove the foil and bake 20 minutes more or until golden brown.

While the pie is cooling, mix the honey and water and heat in the microwave, just until runny.

Brush the mixture on the pie to give it a little sweetness and shinny.
