Hen And Dressing

   Clean hen and put in large pot.

   Add water until almost covered.

   Salt and pepper.

   Cook until tender.

   Prepare Marie's Cornbread for Dressing.

   In large bowl, crumble cornbread and cover with broth.

   Mix well.

   Take meat off bony pieces of chicken, cut up fine and put in mixture.

   Add eggs, onions and poultry seasoning.

    Add more broth until dressing is not quite soupy.

    Mix dressing well.

    Grease roasting pan.

    Pour dressing in pan.

    Place hen on top of dressing.

    Bake at 300u00b0 for 2 hours.
