4 Tablespoons All-purpose Flour
3/4 cups Half-and-half
1 ounce, weight Goat Cheese
3/4 teaspoons Salt
3 whole Heirloom Tomatoes
4 slices Bacon (cooked)
4 ounces, weight Mozzarella (not Water Packed)

Prepare the pizza dough use your favorite recipe or store bought.

In a medium-sized sauce pan, over medium heat, melt the butter.

Add the flour, stirring constantly with a wooden spoon for 2 minutes.

Pour in the half and half and stir until it comes to a boil.

Boil, whisking constantly, for 1 minute, or until thickened.

Take it off the heat and mix in the goat cheese and salt.

Stretch (or roll) dough into a circular shape.

Add a thin layer of goat cheese sauce on its surface and bake for 10 minutes.

While thats baking slice up your tomatoes, bacon and mozzarella.
