Hector'S World Famous Oven Fried Potatoes

   Place prepared potatoes in large pot with the garlic and rosemary. Cover with water and bring to a slow boil.

   Potatoes are done when you can pierce them with a knife and the potato falls off the knife.

   Drain potatoes, garlic and rosemary into a collander and set aside to dry.

   Preheat oven to 400F. Place a heavy duty cast iron porcelain pan with handles into the oven and allow the pan to come to temperature (about 5 minutes).

   Place the oil into the pan and allow oil to come to temperature (about 3 minutes).

   When oil is hot, place dried potatoes, garlic and rosemary into oil, return pan to oven and cook potatoes until crisp on one side (5 to 10 minutes).

   Turn potatoes when crisp using tongs and repeat on other side.

   Remove pan from oven, and using a metal slotted spoon, remove potatoes from the oil into a heat proof serving dish or bowl.

   Salt, pepper and parsley to taste and serve immediately.
