Ingredients: 1 lb Italian pork sausage (hot optional); 2 garlic cloves, minced; ⅓ cup red onion, chopped; ½ cup red bell pepper, chopped; 1 stalk fennel, chopped; 8 ounces black beans, drained; 8 ounces corn, drained; 6 ounces frozen chopped spinach (drained); 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion; ¼ cup seasoned bread crumbs; ½ teaspoon cumin; 1 dozen egg (optional)

1 lb Italian pork sausage (hot optional)
2 garlic cloves, minced
⅓ cup red onion, chopped
½ cup red bell pepper, chopped
1 stalk fennel, chopped
8 ounces black beans, drained
8 ounces corn, drained
6 ounces frozen chopped spinach (drained)
1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
¼ cup seasoned bread crumbs
½ teaspoon cumin
1 dozen egg (optional)

Remove the sausage from its casing and crumble into a pan.

Brown the meat and add the onions, red bell peppers, fennel and garlic.

Saute this together for 5 minutes and then add potatoes to the pan along with the cumin.

Cook mixture for another 5 minutes on a low flame.

Add the black beans, corn and spinach and mix well.

Place the mixture in a casserole dish and sprinkle the bread crumbs on top.

Bake @ 350 degrees for 30 minutes.

Serve it with scrabble eggs if desired.
