1 quart beef stock
1 bay leaf
1 teaspoon dried thyme
3 carrots, peeled and chunked
3 celery ribs, cut in 1 1/2-inch pieces
2 medium onions, coarsely chopped

1 small cabbage, cut in 6 wedges
6 slices French bread, cut thin
3 tablespoons parmesan cheese, grated

Trim beef of fat, thinly slice, and saute in a nonstick skillet over medium heat until lightly seared.
