Size) Diced Tomatoes With Liquid; 1/2 cups Frozen Peas; 1/2 cups Frozen Corn; 1 dash Pepper To Taste; 1 dash Salt To Taste

1 whole Onion, Diced
1 pound Chuck Roast, Chunked (or Precubed Beef For Stew)
8 cups Beef Or Vegetable Broth
2 cups Water
2 whole Bay Leaves
2 teaspoons Dried Parsley
3 whole Carrots, Diced
3 stalks Celery, Diced
1 can (15 Oz. Size) Chickpeas Or Garbanzo Beans
2 whole Potatoes (small), Diced
1 can (14 Oz. Size) Diced Tomatoes With Liquid
1/2 cups Frozen Peas
1/2 cups Frozen Corn
1 dash Pepper To Taste
1 dash Salt To Taste

1. Add approximately 2 tablespoons olive oil to large stock pot and turn on medium high heat. Add diced onion and cook until softened a bit.

2. Add beef and brown all sides. Drain excess fat from pot.

3. Add beef/vegetable broth and 2 cups water. Add bay leaves, parsley and all remaining vegetables and stir.

4. Simmer, covered for 40 minutes to 1 hour until vegetables are to your desired texture. Season with salt and pepper to taste. (Salt depends largely on the stock you've used as the sodium content varies greatly between brands.)
