Ham Fried Rice

   Prepare the vegetables. If using canned bean sprouts, rinse, drain, and pat dry. Set wok on high heat; add 1 tablespoon oil. Heat until hot; add eggs and stir till soft scrambled. Set aside.

   Add 2 Tablespoons oil, bean sprouts, salt and mushrooms. Stir-fry 1 minutes. Remove and put with eggs. Wipe out wok with paper towel and return to heat. Add 2 tablespoons oil and cooked rice and stir till hot. Add soy sauce and stir till well mixed. Add green onions and meat, stir in. Return remaining ingredients to wok and heat 1/2 minute or until warm.

   2 2/3 c. water

   1 tsp. salt

   Heat rice, water and salt till boiling, stirring once or twice. Reduce heat to simmer; cover pan tightly and cook 14 minutes on simmer. Don't uncover or stir. Remove pan from heat; fluff with fork. Cover and let stand 10 minutes with lid on and then use.
