Soak figs in very hot water for 20 mins. Drain, squeeze out excess water, then cut into slivers, discarding stems.

For the dressing, whisk extra virgin olive oil, vinegar and 1/4 tsp salt in a bowl. Place the grapes and pear in a separate bowl with the lemon juice; toss gently.

Melt butter in a medium skillet on medium heat. Add halloumi; brown on both sides. Transfer to a plate.
