H&E!'S Sweet Potato Shepherds Pie

   1.) Cook sweet potatoes, either boiled or in an instant pot. Skin them, and mash them.

   2.) Preheat the oven to 350F

   3.) In a large skillet, cook the minced bacon until just golden brown.

   4.) In the bacon grease make a mirepoix, by adding the carrot, celery and onion. Cook until fragrant and translucent.

   5.) Add garlic and cook for ~4m.

   6.) Add ground beef and cook until browned.

   7.) Drain off excess grease.

   8.) Add paprika.

   9.) Add chicken stock, and simmer until reduced by 60%. Not soupy.

    10. ) In a baking dish, line the bottom with the beef & mirepoix mix.

    11.) Top the backing disk with the masked sweet potato.

    12.) Bake in the oven for 30 minutes.

    13.) Once complete remove from the oven and let stand for 5 minutes.
