2 medium onions, chopped
2 Tbsp. flour
1 1/2 c. country ham, cut up
3 c. tomatoes, peeled and diced
2 c. chicken broth
1 c. raw rice
1 medium bell pepper, chopped
1/2 tsp. thyme
1 tsp. crushed red pepper
2 cans shrimp, drained

Brown chicken in oil in large pot.

Remove chicken and cook onions for 5 minutes.

Add flour, stirring, until flour is browned.

Add ham, chicken and tomatoes.

Cover and simmer for 20 minutes.

Add chicken broth, rice, green pepper and seasonings. Cover and cook for 20 minutes.

Do not stir.

Add shrimp and simmer until hot.
