   In a medium-size mixing bowl, gently mix together the beef, beer, mustard, ginger, garlic, salt, and pepper.

   Form the mixture into 4 patties, each 3/4 inch thick.

   Melt the butter in a large skillet over medium-high heat and cook the burgers to the desired degree of doneness, 3 to 5 minutes per side for medium.

   Remove from the skillet.

   Add the scallions to the skillet and cook, stirring, until just wilted, 1 to 2 minutes.
