Finely chop the shiitake mushrooms and green onions.

Moisten the panko with a little water (until it resembles the consistency of okara).

Add the ground pork, mushrooms, onion, ginger, katakuriko, panko, salt and soy sauce into a bowl and blend together.

Turn the mixture out onto a chopping board and shape into a large rectangle and cut into your desired size.

Add a thin layer of vegetable oil (not listed) to a frying pan and put over the heat.

Add the patties and cook on a high heat until browned.

Turn them over, add 50 ml hot water to the pan and cover with a lid.

Steam the patties on a high heat until the liquid has almost all evaporated and they have turned a nice brown colour.

Serve with some mustard soy sauce and eat whilst hot!
