Break off teaspoon-size pieces of dough, keeping remaining dough covered. Roll each piece into a long, thin log about 10 inches long. Arrange on prepared pans. Lightly spray with water and sprinkle with sea salt.

Bake for 10 mins. Gently shake trays to roll grissini over and bake for another 10 mins, until pale golden and crisp. Cool and serve or store in airtight container.
