Grilled Steaks With Bourbon-Fig Sauce

   Prepare a grill for medium-high heat.

   Heat a small saucepan over medium-low heat and melt the butter. Add the shallot and garlic and cook 2 minutes.

   Add the fig preserves, bourbon, and maple syrup and season with salt and pepper. Bring to a light simmer, then reduce the heat and cook slowly, stirring frequently, 5 minutes.

   Remove from the heat. If not using right away, cover and let stand at room temperature. Reheat gently just before serving.

   Brush both sides of the steaks with olive oil. Season with salt and pepper and grill 2 minutes over direct flame. Turn and grill 2 minutes on the other side.

   Continue grilling and turning until the steaks are medium-rare, 10-12 minutes total (depending on thickness), moving off-heat as needed to prevent flare-ups.

   Remove the steaks and let rest 3 minutes.

   To serve, plate the steaks and drizzle each with sauce.
