Grilled Cheese Bagels

   Open the bagel, cut off the corners of the cheese. Put one slice on the bagel, top with the tomato pieces. Top with the second piece of cheese. Top with the top of the bagel.

   Preheat a cast iron pan. When it gets really hot, spray with a bit of cooking spray and put the bagel in. Put something heavy on top and let it sit for 1-2 minutes, on MED-HIGH heat. Carefully turn over and let it cook for another minute or so until cheese melts and bagel gets browned. Remove. Let sit for 5 minutes or so. Cut in half.

   Put in a piece of tin foil and wrap up. Put in insulated lunch box.
