Instructions: Combine the red wine, soy sauce, brown sugar, chile sauce, oyster sauce, vinegar, garlic and ginger in a small saucepan. Bring to a hard simmer and cook until syrupy, about 15-30 minutes depending on the size of your pan. Taste and remove garlic and ginger early or before the glaze cools, as needed - the flavors should be subtle. The glaze will thicken further as it cools. You should have 4-5 tablespoons.
