Chop all vegetables. Combine in a large kettle or pot. Stir in salt and let stand overnight or at least 8 hours covered and at room temperature. Drain off liquid. Combine vinegar, sugar, dry mustard, ginger and turmeric in a large pot. Place mustard seed, celery seed and pickling spices in a 6 inch square of cheese cloth, gather into a bag shape and tie at top with a string. Add spice bag into the vinegar solution. Bring liquid to a boil and simmer for 30 minutes. Add drained vegetables and return to simmer for 30 minutes longer. Discard spice bag.

Spoon chow chow into clean, hot, sterilized jars and place tops on them. Process for 15 minutes in boiling water canner.
