Lime Mint Spritz

   Heat sugar and water in a small pot until melted. This will make a substantial amount of simple syrup which you can store in a sealed container in the fridge.

   Muddle 5 mint leaves into each cup. If you don't have a muddler, smashing the leaves up with your fingers will do the trick. Juice 1 lime into each cup.

   Add a tablespoon of simple syrup and top the glass off with seltzer. Give it a little stir and garnish with an additional mint leaf.
