2 pounds chicken breast halves, boneless, skinless
1/2 cup flour, unbleached all-purpose
1/2 teaspoons salt
⅛ teaspoon black pepper
2 large eggs beaten
1 x vegetable oil for frying
⅓ cup soy sauce, tamari
13 cuo honey
1 tablespoon sherry dry or (sugar)
1 clove garlic crushed
1 teaspoon ginger fresh grated
2 tablespoons sesame seeds
1 x celery optional, for garnish

Cut the chicken with 1 inch squares.

For appetizers, cut into 1 inch (2 1/2 cm) squares.

Combine flour, salt, and peppers.

Dip in egg and coat with flour mix.

Pour 1/2 inch oil in a wide drying pan; place over medium heat.

When oil is hot, add chicken, half at a time.

Cook and turn as needed until chicken browns.

Meanwhile heat soy, honey, sherry, garlic, and ginger.

Lift chicken from oil, dip into the honey soy mixture and place on cooking rack in a baking pan.

Bake at 250F (125C) for 20 minutes, brushing with glaze after 10 minutes of cooking.
