Add the butter and quickly rub into the flour with your fingers so that the mixture resembles breadcrumbs. Beat the egg and the buttermilk together in a bowl, stir into the flour. Next, stir in the apples and granola. Bring it together with your hands to form a dough; it should be quite dry.

Transfer the dough to a floured work surface and press it out to a 4 x 9 inch rectangle. It should be about 3/4 inch thick. Using a pastry cutter, cut out the desired number of scones, transfer them to a baking sheet that has been lined with parchment paper.
