Preheat oven to 350 degrees (F).

In a sauce pan combine butter, honey, maple syrup, brown sugar, and salt. Bring to a slow boil over medium heat. Stir continuously for 5 minutes while syrup is boiling, remove from heat and add vanilla. Let cool slightly.

In a large mixing bowl combine oats, nuts, dried fruits, pepitas, flax, and wheat germ. Pour syrup over the granola mixture. Incorporate until dry mixture is completely covered with syrup. Spray a 11x15 sheet pan with non-stick cooking spray, spread granola mixture in the pan and press down into the pan.

Bake at 350 degrees for 30 minutes. Remove and let cool. After allowing to cool, use a spatula to break into small pieces. Store in Ziploc bags or an airtight plastic container. Granola freezes well and is great to give for gifts.

Note: Have fun with this recipe. Add any dried fruit or nuts you love. Feel free to omit the flax seed or wheat germ. Make it your own.
