Saute the crumbles with the onion and peppers in olive oil until the onion is soft. Add the spaghetti sauce and undrained diced tomatoes and simmer on low for about an hour. Add extra spices to the sauce if you want, such as oregano and garlic. Cook the noodles to the al dente stage.

You will need a deep baking dish for this. Cover the bottom of your baking dish with a thin layer of sauce. Layer noodles, slightly overlapping, sauce and combined cheeses. Continue layering until you have used all of the ingredients, ending with a layer of cheese. You don't need to put a ton of sauce in each layer but be very generous with the cheese. If you have more sauce than you need at the final layer, use it all. It will cook down through the layers.

Bake covered at 400 degrees for 35-40 minutes. Uncover and bake another 10 minutes or so for the cheese to slightly brown.
