Peel each apple, but leave a small strip of skin around each one keep it together while it cooks. Using a melon baller, scoop out the core, leaving a hole in the middle. Be careful not to go through to the bottom. As you core each apple rub a small amount of lemon juice on each to keep from browning.

In a large skillet, add water and sugar and bring to boil. Add in cinnamon candies and let them melt and continue cooking until mixture begins to thicken. Add each apple, carefully, and begin spooning the mixture over the apples. This will take your constant attention since the apples will cook as you spoon the hot liquid over and into the cavity. Apples will become tender in about 10 minutes. Turn down heat, add half of a large marshmallow (or three mini-marshmallows) into each hole, cover the pan and continue to cook for five minutes.

Serve warm or room temperature. Cinnamon mixture is delicious over ice cream too.
