Chop your green pepper, onion, and potato. Next you will want to cook the green pepper and onion in the vegetable spray until tender, about 5 minutes. I didn't have any vegetable cooking spray, so I just used a couple of tablespoons of olive oil in the pan.

Stir every few minutes for about 5-8 minutes until tender.

Next, stir in chicken broth, potatoes, salt & pepper.

Bring to a boil. Then reduce heat and let simmer for 5-7 minutes until tender.

In a separate bowl, combine milk and cornstarch and stir until smooth. Then gradually add to potato mixture and stir.

Add corn and pimentos!

Bring your chowder to a boil over medium heat, stir until thick. This is where it is important to make sure you are stirring often, so it doesn't burn to the bottom of the pan!

Since Big D can't eat anything that doesn't have some sort of meat in it, I added and stirred in some crab meat chunks once it was thick and I turned off the burner. This allowed the crab meat to warm up in the chowder right before serving. But you can eat it without meat or add meat, whatever works for you!
