Ingredients: 6 cups Sliced Apples; 1/2 cups Boiling Water; 1/2 cups Brown Sugar, Packed; 1/2 cups Granulated Sugar; 1/2 teaspoons Salt; 1/2 teaspoons Ground Nutmeg; 1/2 teaspoons Ground Cinnamon; 3 Tablespoons Quick Cooking Tapioca; 1 teaspoon Lemon Zest; 2 Tablespoons Butter; 1 whole Double Pie Crust

6 cups Sliced Apples
1/2 cups Boiling Water
1/2 cups Brown Sugar, Packed
1/2 cups Granulated Sugar
1/2 teaspoons Salt
1/2 teaspoons Ground Nutmeg
1/2 teaspoons Ground Cinnamon
3 Tablespoons Quick Cooking Tapioca
1 teaspoon Lemon Zest
2 Tablespoons Butter
1 whole Double Pie Crust

Please note that you can of course make your own pie crust. I frequently do. It's just easier to say a package of pie crust.

Preheat the oven to 450F.

To start, peel, core and slice the apples. I use Granny Smith apples because it gives the pie a nice tang, but make sure they are baking apples!

Put the apples into a large pot with the boiling water and let the apples cook covered for about 4-5 minutes so that they're just a little bit soft. Then set aside to cool.

While this is happening, mix up the dry ingredients including the zest.

After the apples are a little cool, mix in half of the dry ingredients in with them.

Then put the mix into the pie shell and cover the top with the rest of the dry mix.

Finally, put the top shell on. Lattice, or full on top with slits. Go crazy.

Put the pie into the oven and cook at 450F for 10 minutes then reduce the heat to 350F and cook for the remaining 30 minutes or until done.
