Combine flours, baking powder, soda, salt and cinnamon in food processor just until combined. Add butter and processes until incorporated. With machine running add honey, milk and vanilla. Start with 1 oz milk, add up to 2 oz just until mixture comes together and there is no dry flour left.

Wrap mixture in plastic wrap, and place in the fridge for about 30 minutes.

Heat oven to 350 degrees.

Cut sheet of parchment to fit large baking sheet. Place dough on sheet, cover with fresh sheet of plastic wrap and roll until even thickness about 1/8 inch. Remove plastic wrap, place parchment with dough on baking sheet and cut into squares with pizza slicer. Dock with a fork. Optional: Sprinkle with cinnamon sugar mixture.

Bake 20-25 minutes. Let cool on baking sheet, then break apart crackers.
