1
Toast pine nuts in a dry nonstick skillet over medium heat until lightly browned.
-
2
Preheat broiler on high.
-
3
Remove flatbread from wrapper and place on pizza pan (see note below).
-
4
(If your flatbread came with a sauce packet, reserve the sauce packet for another use.)
-
5
Broil 4 to 6 inches from heat for 4 to 5 minutes.
-
6
Remove from broiler, turn flatbread over and broil the other side for an additional 4 to 6 minutes.
-
7
You want a nice, crispy, browned crust.
-
8
While flatbread is broiling, slice figs into quarter sections.
-
9
Cut the little stems off if needed.
-
10
Remove the flatbread from the oven.
-
11
While still hot, dot with the goat cheese.
-
12
Once softened, spread out over the entire surface.
-
13
Spread the quartered figs out in an even layer.
-
14
Sprinkle with toasted pine nuts.
-
15
Return to broiler and cook for 5 to 10 minutes, depending on how hot your oven cooks.
-
16
You want everything to be heated through and the figs to soften slightly.
-
17
Remove from oven and place on serving platter.
-
18
Drizzle with the honey.
-
19
Cut into 12 slices and serve!
-
20
Note: You may use a pizza stone if you have one.
-
21
Just remember to preheat the stone at the same time you preheat the broiler.
-
22
You also can just slide the flatbread directly onto the oven rack.
