Place chicken between 2 sheets of plastic warp on work surface. Using mallet, pound chicken into 1/3 inch thickness. Sprinkle chicken with salt and pepper. Place 2 sage leaves atop each chicken breast half. Then top each with 2 slice of ham. Pressing ham onto chicken. Spread 1/2 cup gluten free flour on plate. Turn chicken in flour lightly to coat each side. Melt butter with oil in large non stick pan over med-high heat. Place chicken in pan, with out touching other pieces, ham side down first.cook 4-5 min, then turn and cook about 3 more min. You will have a nice crust. When finished cooking chicken, place in a warm oven on a platter and reserve the skillet.

Whisk wine with 2 tsp of flour mix in a small bowl. Add broth and citrus juices to same skillet; bring up to a boil. Add wine mix and whisk till slightly thickens. Season to taste with Salt and Pepper. Serve sauce over chicken and serve a side of fresh veggies to accompany chicken.
