Preheat oven 350 F. Spray mason jars with cooking spray and set them aside.

In a bowl, add the package of brownie mix, yogurt, espresso powder, vanilla extract, water and egg whites and mix until thoroughly mixed.

Fill mason jars about 2/3rds full with brownie batter. Place jars on a baking sheet and bake in oven for 30 minutes or until center is firm. Test brownie with a toothpick. If you insert a toothpick into the middle of a brownie and it comes out clean brownies are done.
