3 eggs
3/4 c. buttermilk
1/2 c. oil
1 1/2 tsp. vanilla
2 c. loosely packed shredded carrots
1 c. coconut
1 c. chopped pecans
1 can crushed pineapple (2/3 c.), well drained

In small bowl, beat eggs slightly.

Stir in buttermilk, oil and vanilla.

Pour into greased and floured 9-cup tube pan.

Bake in preheated oven at 350u00b0 for 45 to 50 minutes.

Cool in pan 10 minutes.
