pre heat oven to 350

if the pastry sheets are frozen let them thaw for 20-30 min.

in a bowl combine the chopped spinach, chopped onion, salt, pepper, parsley, crumbled feta cheese and mix very welll

get a large oven pan and spray with cooking spray.

be very careful, take 3 pastry sheets and put a little more then a tablespoon of the spinach mixture in the corner then spray the pastry sheet with cooking spray to keep the sheets moist so they dont break.

fold over once to the right to make a triangle then fold again to the left over lapping the sheets keep folding around to make your triangle

make sure they are folded nice and snug.

place on your oven pan and brush with egg whites and then spray the Spanakopita with cooking oil
