1 c. white rice
1 onion
1 clove garlic
2 1/2 c. tomato juice or V-8 juice
1/4 c. vinegar
salt to taste
1/4 tsp. pepper
2 tsp. sugar
1/2 medium green pepper, diced
1/2 medium cucumber, diced
1 tomato, diced

Fry hamburger and drain well.

Add rice, juice, onion, vinegar, salt, pepper and sugar; bring to boil.

Reduce heat and cover.

Simmer for 20 minutes.

Remove from heat and let stand 5 minutes.

Stir in chopped green pepper, cucumber and tomato. Cover and cook 5 minutes.
