4 large eggs
1/2 cup heavy cream
1 tablespoon apple cider vinegar
1 teaspoon dry mustard powder
1 teaspoon dark brown sugar
1 small head Bibb lettuce, leaves torn into bite-size pieces
2 cups lightly packed baby arugula
2 medium tomatoes, cut into wedges
1/2 English cucumberhalved lengthwise, thinly sliced crosswise
4 thinly sliced radishes
2 thinly sliced scallions
2 tablespoons chopped parsley

Preheat the oven to 375.

Brush the beets with oil and season with salt.

Wrap the beets in foil and bake for 1 hour, until tender when pierced with a knife.

Let cool slightly, then peel and cut into 1/2-inch wedges.

In a saucepan, cover the eggs with water and bring to a vigorous boil.

Cover the saucepan, remove from the heat and let stand for 10 minutes.
