Add water to bread machine first followed by all of the other dough ingredients. Set machine to knead and rise one time. Oil dough when finished and store in a plastic bag either in the fridge or freezer, depending on when you plan to assemble the bread.

Roll out dough on an oiled surface to be the length of your cookie sheet and as wide as you can make it. With the exception of the broccoli bread, which you start by spreading the mustard over the rolled out dough, start by laying out the sliced cheese in single rows along the long side of the dough working away from you. Apply your other ingredients as you like keeping in mind that you will roll the dough up from the long side, working away from you. Roll up. Turn under the ends and seal. Seal the long seem well with your fingers and transfer to an oiled foil-lined baking sheet, seam side down. Bake at 375 degree until brown and bubbly (35-45 minutes).
