Full of Chocolate Sweet Potato Truffle

   Soften the sweet potatoes with your preferred method and then mash.

   I always steam in a pressure cooker.

   Melt chocolate in the microwave or water bath.

   Add the mashed sweet potatoes and skim milk.

   Mix with a rubber spatula.

   Shape into balls with your hands and dredge with cocoa powder to finish I like them best chilled in the refrigerator.

   Even though it is dredged in sugar-free cocoa, the sweetness is delicious.

   Give it a taste and if you think it's not sweet enough, add a little sugar.

   This is a white chocolate version.

    I stuffed them with leftover cream cheese.
