Bring 6 quarts lightly salted water to a boil. Add pasta and cook to the lighter side of package directions, or til al dente. Drain and put in large bowl.

Preheat oven to 350

beat eggs lightly and add to noodles with the apples, raisins, dried fruit, sugar, oil and salt. Mix well and place in a buttered 2 quart casserole dish. Sprinkle top with cinnamon sugar and bake for 40 minutes.

While baking, make apricot sauce.

Combine water, sugar and apricot in medium saucepan and bring to a boil. Simmer 20-25 minutes. Cool slightly and place in blender or food processor. Blend until smooth. Add vanilla and blend again. If needed, add more water until desired consistancy is met. Drizzle over hot fruited noodle bake. May be made one day ahead.
