Put the dried fruit into a bowl.

Pour the hot tea over the dried fruit and let it sit for about an hour.

Preheat your oven to 325 F. Make the chia egg by combining the ground chia seeds and water in a small bowl so it can sit and congeal for a few minutes.

In a mixing bowl, combine the flours, baking powder, salt, and 4 tablespoons of the coconut sugar.

Stir in the dried fruit with any extra liquid, the chia egg, and stevia until well combined.

Pour into a glass pie plate that has been lined on the bottom with a parchment paper circle and smooth the dough out.

Bake for about 40 minutes.

(When done, the edges should be nicely browned and a toothpick inserted in the middle should come out clean, although it might still look a little soft.

Sprinkle with the remaining coconut sugar as soon as it comes out of the oven.
