1
Preheat oven to 350F.
-
2
Spray a 13x9 pan with cooking spray or butter.
-
3
Boil noodles until slightly al dente (theyll cook a little more in the oven).
-
4
While theyre cooking, melt your butter (I usually just pop it in the microwave).
-
5
Peel, core, and dice your apples.
-
6
I like them a little smaller, but its a personal preference.
-
7
Mix your sugar and cinnamon.
-
8
I usually use an old jar with a lid, so if theres any extra, I can keep it handy.
-
9
Drain the noodles and immediately mix with the melted butter to keep them from sticking together.
-
10
Stir in your chopped apples and raisins.
-
11
At this point, I salt and pepper the noodle mixture, adding a little less than 1/2 of the sugar and mixing well.
-
12
It helps cool the noodle mixture a little, too.
-
13
Once the noodles arent boiling hot, mix in your beaten eggs, making sure everything is completely incorporated.
-
14
Once its all mixed up, pour it into your prepared baking dish.
-
15
I try and smooth the top slightly, so the noodles arent sticking up too much.
-
16
Otherwise, they get too crispy.
-
17
I sprinkle the rest of the cinnamon sugar mixture on top.
-
18
Its going to look like a lot of sugar and it is, but its sooo good.
-
19
Bake for 30-45 minutes, till the top is golden brown.
-
20
If it starts to get too brown, you can cover it with foil.
-
21
Remove from the oven and cool slightly.
-
22
I try to cut it into squares to serve, but the kids usually just grab the serving spoon from me and load their plates up.
