   Lay chicken on its back on a flat work surface.

   Using a sharp knife, make a cut between the leg.

   Bend the leg away from the body and press fingertips into the back of the joint to pop the joint loose.

   Continue to cut leg away from breast, then make a cut through the joint connecting the drumstick and the thigh.

   A thin line of fat over the joint will act as a cutting guide.
