Fried Chicken Wings With Sauce

   For the wings: Season the wings with salt and pepper to taste.

   Add the coriander, thyme, sweet chili sauce, garlic, lemon zest and lemon juice and mix well.

   Marinate the wings in the sauce.

   Drain the wings and sprinkle with flour. Heat olive oil in a large skillet and fry the wings over medium heat.

   Use a lid or aluminum foil to prevent the olive oil from popping. When wings are cooked remove from heat and drain on paper towels.

   For the sauce: Place the remaining flour in the skillet and whisk to combine with the pan juices. Add the milk and stir until thickened. Season to taste.

   Serve the wings with the sauce and basmati saffron rice.
